BBQ Pineapple Chicken


So, I was hoping on grilling tonight but for some reason my apartment complex closed the pool area early this year and already put away the grills! :( I am kinda bummed about that.... So it was off to the oven. I made BBQ Pineapple chicken with Jasmin rice and a salad. It was pretty easy and really good, Matt loved it! Here is the recipe for 1 serving, doubling and tripling is easy :)

1 chicken breast (I used 4 tenderloins)
BBQ Sauce
1 Pineapple ring
1 Green Pepper ring
1 Slice of Red Onion

Place the chicken on a large piece of aluminum foil. Brush with BBQ Sauce on both sides. Place 1 pineapple ring, 1 pepper ring and 1 slide of red onion on top of the chicken. Fold the foil on the top and sides, leaving room at the top for heat to travel and cook at 375 for 20 minutes. If grilling, grill for 15 min or until chicken is 165 degrees.

Pretty easy if you ask me, and no dishes to clean up! Well, except for the rice :)
