Today was a slow Monday for me... usually Monday's at work go by fast... but today was slow and I stayed late today too.... I really had no desire to cook tonight but I've chicken in the refrigerator for the past 2 days, so I needed to use it.....
Hmmmm.... What to make....Let's check out the fridge....ok so the chicken is a must... what else do I have??? Broccoli and what is that tucked away in the corner?? Philly Savory Garlic Cooking Cream... Might be on to something.... So I take the cooking cream out and there is a little piece of paper on the top that had a few recipes in it... One which happened to be.......
Creamy Chicken & Broccoli Casserole
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 pkg. (14 oz.) frozen broccoli florets, thawed, drained
1-1/2 cups Shredded Sharp Cheddar Cheese
1 tub Philly Savory Garlic Cooking Creme
1/2 cup milk
24 Crackers, crushed (about 1 cup)
1 Tbsp. butter, melted
Heat oven to 400ºF.
Combine first 5 ingredients in prepared 13x9-inch baking dish; cover.
Bake 25 min. Meanwhile, mix cracker crumbs and butter.
Stir chicken mixture; top with crumbs. Bake, uncovered, 10 min. or until topping is golden brown.
Super easy! The hardest part was I had fresh broccoli and cutting it into florets...
Ok I'm tired... I think tonight I'm going to call it an early one...Ciao!
