Fun Guy.....

The past 3 nights with dinner it did not look pretty but tasted awesome... Tonight I finally got back in the groove and dinner looked and tasted good... I found the following recipe on Pinterest, my new addiction :)


Tortellini with Mushroom Sauce

Ingredients
  • 1 bag frozen cheese tortellini
  •  1 tablespoon olive oil
  • 8 ounces sliced cremini mushrooms
  • 2 garlic cloves, sliced
  • 1 cup water
  • Coarse salt and ground pepper
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoon cold butter
  • a few dashes of Italian seasoning
Directions
  1. In a large pot of boiling salted water, cook tortellini according to package instructions; drain.
  2. Meanwhile, in a large skillet, heat oil over medium-low heat. Add mushrooms and garlic; cook, stirring frequently, until mushrooms are tender, about 7 minutes.
  3. Add 1 cup water; season with salt and pepper. Cook until liquid is reduced by half, about 5 minutes. Remove from heat; add tortellini, Parmesan, butter, and Italian seasoning. Toss to coat; serve.
Quick and easy and turned our really good!

Happy New Year!

Happy New Year!! It has been a while since I posted.... Guess planning a wedding will do that to you :) Plus our computer died too :(

I wanted to take a before picture of our New Years Eve Dinner.... but forgot! so, here is the aftermath of dinner... we had the "melting pot" at home.... teriyaki marinated tuna, sirloin steak, tropical hawaii marinated chicken and garlic and red wine chicken sausage... cooked in coq au vin broth... 
 The tuna was by far our favorite! I made a homemade Teriyaki marinade and it was to die for!

No cooking tonight... have a ton of left overs to eat up from the holidays.... Time to go and reheat them up! :oP
